Veg Chelo Kebab

Chelo Kebab is the national dish of Iran and is available at its best in Peter Cat, another legendary restaurant in Calcutta. There is always a queue to enter the restaurant on any given day for lunch or dinner service. The iconic restaurant has given its own twist to the national dish of Iran. Here’s how I recreated this Iranian delicacy in a slightly tweaked format, although I have never been to Peter Cat. Let me visually guide you through the most delicious delicacy; here Mushroom Jujeh Kebab and Minced Soya Koobideh Kebab are served with Chelo, which is cooked buttered-saffron rice. The marinade of the Kebab is super easy yet unique.

Plating:

Each serving plate gets a generous serving of rice, a skewer of Soya kebab, Mushroon kebab and a grilled tomato. The rice is then topped with a fried sunny side up egg. One extra cube of butter on top of the rice will make it sinfully tasty.
